Leaving Rio Grande

After a breakfast of fruit and fresh orange juice with Marcelo and bubbly Natalie, we loaded up backpacks and headed to the highway running alongside the South Atlantic.

Side roads gave way to dirt tracks which became sporadic tire tracks running the fence line alongside Ruta 3. Generally easy walking, enjoying dry feet.

Mision Salesiana

Within a couple hours we passed Misión Salesiana. It was originally founded here as a mission and is now an agriculture school with students ranging in age from children to adults.

We had heard about a cheese sale, so of course we had to stop in. The small shop had products all made there on campus ranging from sheep and cow cheeses, jams, and eggs, to full legs of animals, freshly cut. Cheese being a staple of our trail diet, we were enthusiastic.

Here we met Alan, giving generous taste tests. As we inquired into the workings of the school, he volunteered to show us around. Happy to amble without packs for a bit and only having about 20 km to walk that day, we followed along. He spoke passionately about the studies.

A working school, the money which comes in from product they sell goes back to funding the school.

“In most schools it is all about theory and theories about theories. I prefer to be active; I am from the city, but I like to be outside,” Alan answered my queries, “this school is 7 years to graduate.” There are no scholarships, but if something is going on at home or with family they are flexible with the payment of about $75 per month per student.

He showed us around the barn where sheep were being gathered and sheared. Various other students hopped in to demonstrate the stages from the shears to packing the wool. Outside,  students worked with more experienced hands to separate the animals into pens of male, female, and lamb.

Alan moved with a certain ease among the sheep. He will be an asset to whatever estancia one day employs him.

They work with the animals from every stage from birth to being sent for sale.

We also got to peep inside the processing area or, as Neon calls it, the “meat lab.”

“We work with the animals from birth to this stage,” the professor said as he proudly slapped the flank of the gutted and cleaned animal hanging beside him, setting it to spinning on its hook.

This was a room I’d only ever seen in gangster movies. It smelled heavily of cleaning chemicals. Each animal was stamped and certified, ready for the butchers in town.

Know your food. A novel movement in most developed areas, here it is a way of life. Still, in the lunch room, the students report mainly eating pizza and hamburgers.

Returning to the sale room, Alan took back over so the teacher could go for a smoke break. Everyone was busy with whatever they were about, be it decorating a Christmas tree or herding sheep. All seemed happy, friendly, and engaged.

We snacked a bit more, shouldered our packs and continued north.

Despúes de un par de horas pasamos la Misión Saleciana. Originalmente fue fundada como una misión y ahora es una escuela de agricultura con estudiantes de edades desde niños hasta adultos.

Habíamos oído hablar de una venta de quesos, así que por supuesto tuvímos que parar. La pequeña tienda tenía productos todos hechos en el campo, desde quesos de vaca y oveja, mermeladas y huevos, hasta patas completas de animales, recien cortadas. Siendo un elemento básico de nuestra dieta dieta en el camino, estabamos entusiasmadas.

Aquí nos econtramos con Alan, dando pruebas de sabor generosas. A medida que nos preguntabamos sobre el funcionamiento de la escuela, se ofreció a mostrarnos. Feliz de deambular libremente sin carga por un rato y solo teniendo 20 km que caminar ese día, seguimos a lo largo. Nos habló con pasion del estudio.

Una escuela de trabajo, el dinero, que viene de la venta de los productos que ellos venden va de vuelta a financiar a la escuela.

Prefiero ser activo; soy de la ciudad, pero me gusta estar afuera, ´´ Alan respondió a mis preguntas, ´´esta escuela es de 7 años para graduarse´´. ´´ no hay becas, pero si algo esta pasando en casa o con la familia son flexibles con el pago de alrededor de $75 al mes por estudiante.

No mostró alrededor del granero donde las ovejas están siendo reunidas y esquiladas. Varios otros estudiantes saltaron en demostrar las etapas de la cillaza para embalar la lana. En el exterior, los estudiantes trabajaron con manos más experimentadas para separar los animales en corrales de machos, hembras y corderos.
Alan se movió con cierta facilidad entre las ovejas. Él será un acierto para cualquier estancia que lo contrate algún día.

Esta era una habitación que sólo había visto en las películas de gánsters. Tenía un olor profundo a quimicos de limpieza. Cada animal fue sellado y certificado, listo para los carniceros de la ciudad.

Conoce tu comida. Un nuevo movimiento en las áreas más desarolladas, aquí se trata de una forma de vida. Aún así, en el comedor, los alumnos informan sobre comer casi siempre pizza y hamburgesa.

Volviendo a la sala de ventas, Alan tomó el puesto para que el profesor pudiera tomarse un descanso e ir a fumar un cigarrillo. Todo el mundo estaba ocupado en lo que sea que les tocará hacer, ya sea la decoración de un árbol o la cría de ovejas para navidad. Todo parecían feliz, amables y comprometidos.

Merendamos un poco más, nos montamos nuestros bolsos en el hombro y continuamos hacía el norte.
